Day 61 - Comfort Food

When I was growing up I my mom would make something called Macaroni Mix-Up. Looking back on it I realize that it was an inexpensive way to feed five kids. Every once in a while I get nostalgic and make it, today was one of those days.

The recipe couldn't be simpler. Brown one pound of ground beef. While the meat is cooking, cook one pound of elbow macaroni. Once the meat is ready add one can of condensed tomato soup, a half can of water and some Italian seasoning. Add the elbows when ready and mix well. Top with some grated Parmesan and serve. I'm going to mix it up a bit next time. Instead of half a can of water, I'm going to add a can of diced tomatoes with the liquid.
